Ingredients
Satay skewers:
- 400 g chicken thighs (skinless and boneless)
- 1 tbs fish sauce
- 1 tbs lime juice
- 1 ts soy sauce
Peanut sauce:
- 200 ml coconut milk
- 1 tbs red curry paste
- 100 g peanut butter
- 1 tbs sugar
- 1 ts soy sauce
- 1 tbs apple cider vinegar
- 100 ml water
- 1/2 ts salt
Preparation
1. Cut chicken thighs into approx. 3 cm pieces and mix with fish sauce, lime juice and soy sauce. Cover and marinate for approx. 1 hour.
2. To make the peanut sauce, mix all the ingredients in the pot, bring to a boil while constantly stirring, switch to a low level and simmer for approx. 5 minutes.
3. Place the chicken pieces on 4 wooden skewers, slightly dab dry with paper towel.
4. Heat the pan on highest level up to the roasting window, place the skewers in the pan and roast on all sides. Switch off the hob, cover with lid and let stand for approx. 5 minutes. Serve satay skewers with peanut sauce.
Tip
- Serve with lime wedges and a few stems of coriander.
- Chicken breast can also be used instead of thigh meat.
