Pasta and zucchini salad with feta dressing

  1. 500 g zucchini
  2. salt, pepper
  3. 250 g penne (short, tube-shaped pasta)
  4. 100 g cocktail tomatoes
  5. 200 g feta
  6. 75 ml vegetable broth
  7. 3 tbs lemon juice
  8. 3 tbs olive oil
  9. spicy paprika powder

1. Clean the zucchini and slice it into sticks that are roughly the same size as the penne.

2. Heat the pan at highest level up to the roasting window, then switch to a low level and cook the zucchini for approx. 3 minutes, stirring occasionally. Remove from the pan, then season with salt and pepper.

3. Cook the pasta until al dente, according to the instructions on the package.

4. Cut the cocktail tomatoes in half and mix them into the hot pasta and zucchini.

5. Puree the feta with the vegetable broth, lemon juice and olive oil. Season to taste with pepper and paprika powder, then stir into the salad.
