Carrot soup

  1. 1 onion
  2. 300 g mealy potatoes
  3. 500 g carrots
  4. 650 ml vegetable broth
  5. 150 ml dry white wine
  6. 150 ml apple juice
  7. 100 g crème fraîche
  8. 1 bunch chives
  9. salt, pepper
  10. nutmeg

1. Peel and chop the onion. Peel and dice the potatoes and carrots.

2. Put the potatoes and carrots dripping wet in the pot and spread the onion over them.

3. Place pot on the hob and set it on highest level. Switch on Audiotherm, enter approx. 20 minutes cooking time, fit it on Visiotherm and turn until the vegetable symbol appears.

4. As soon as the Audiotherm beeps on reaching the vegetable window, set hob to low level and cook until done.

5. Pour broth, wine and juice with the vegetables. Bring the soup to the boil, add the crème fraîche and puree.

6. Cut the chives into rings. Season with salt, pepper and nutmeg. Arrange with chives.

Tip

  • A freshly baked bread tastes very fine with it.
