Moorish skewers

  1. 300 g pork fillet
  2. 300 g lamb saddle
  3. 100 ml dry sherry
  4. 1 ts sweet paprika powder
  5. 1 knife tip cayenne pepper
  6. 1 ts cumin seeds
  7. 1 ts lemon zest
  8. 4 thin spring onions
  9. 6 bay leaves
  10. salt, pepper

1. Dice the meat. Stir the sherry and spices up to and including the lemon zest. Mix the marinade and diced meat, cover and marinate for approx. 2 hours.

2. Clean the spring onions and cut into approx. 5 cm long pieces. Thread the diced meat, spring onions and one bay leaf each onto six skewers.

3. Heat the pan on highest level up to the roasting window, switch to a low level, place the skewers inside and roast until the turning point is reached.

4. Turn the skewers, close with the lid and let stand on the switched-off hob for approx. 5 minutes. Season with salt and pepper.
