Béchamel sauce

  1. 20 g butter
  2. 20 g flour
  3. 400 ml milk, cold
  4. salt, pepper
  5. lemon juice

1. Add butter to the pan, heat up on highest level until the butter becomes frothy and switch to a low level.

2. Add flour and roast briefly while stirring.

3. Add milk while stirring. Bring the sauce to a boil while stirring constantly and simmer for approx. 5 minutes. Season to taste with salt, pepper and lemon juice.

Tip

  • Béchamel sauce is a basic sauce traditionally used in dishes such as lasagna, for example. However, it is also a base sauce for many other sauces and dishes.
  • Round off the béchamel with a little white wine or some grated nutmeg.
  • For a lighter sauce, some of the milk can be replaced with a low-fat broth (e.g., vegetable or chicken broth).
