Potatoes are low in calories and consist mostly of water. They are power tubers that provide starch, fibre, protein as well as many minerals, vitamins and secondary plant substances. Potatoes keep you satiated for long as they contain long carbohydrate chains, which are broken down by the body only slowly. They become even more satiating when they are cooled down briefly after cooking, as in a potato salad, when resistant starch develops which is even harder to break down. Potatoes should be stored in as cool, dry and dark a place as possible.
