Ingredients
- 1 medium onion, sliced
- 1 cinnamon stick
- 1 clove
- 2 green cardamoms
- 2 green chillies, slit
- 1 ts garlic paste
- 1/2 ts ginger paste
- 1 medium potato, diced
- 6 french beans, cut into diagonal strips
- 1 medium carrot diced
- 9 small cauliflower florets
- 1 large tomato, grated
- 1/2 cup shelled peas
- 1 cup basmati rice
- 2 cups water
- salt to taste
Spice powder
- 1/2 ts chilli powder
- 1/4 ts turmeric powder
- 1 ts garam masala powder
Garnishing
- 3 chopped coriander leaves
- 2 tbs chopped mint leaves
Seasoning
- 1 onion, sliced
- 1 ts ghee/oil
Preparation
1. Place the onions, green chillies and whole spices in the pot. Place pot on stove. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears.
2. As soon as the Audiotherm beeps on reaching the roasting window, open the lid and roast the onions until they turn golden brown. Set at low level and add ginger-garlic paste, roast for a minute. Stir in the tomato and vegetables.
3. Now add the rice and water, coriander leaves, mint leaves and salt to taste.
4. Set stove at highest level, switch on Audiotherm, enter approx. 12 minutes cooking time in the Audiotherm, fit it on Visiotherm and turn it until the vegetable symbol appears. Set at low level and cook until done. Keep it covered for a few minutes before removing the lid. Serve hot with raita of your choice.
Tip
- For the seasoning, add onions and ghee/oil to a cold 16 cm pot. Set stove at highest level and heat pot up to the roasting window, using Audiotherm. Keep the lid aside, set stove at medium level and roast the onions until golden brown. Switch off the stove and mix it into the pulao.
