Tomato salad with oranges and feta

  1. 4 oranges
  2. 500 g tomatoes
  3. 1 mango
  4. 250 g spring onions
  5. 400 g feta
  6. 4 tbs white balsamic vinegar
  7. 4 tbs olive oil
  8. salt, pepper

1. Segment the oranges into slices. To do this, use a sharp knife to remove the peel and the white skin and segment into the orange slices by cutting between the membranes. Collect the juice in the process.

2. Clean the tomatoes, halve them depending on their size and cut into slices. Clean the mango, remove the stone and dice.

3. Clean the spring onions, cut them into fine rings and dice the feta.

4. Stir the orange juice, vinegar and oil with salt and pepper into a dressing.

5. Plate the salad vegetables and fruit in a small Lasagnera, spread the feta over top and drizzle with the dressing.
