Caramelized cinnamon almonds

  1. 200 g peeled, whole almonds
  2. 150 g sugar
  3. 100 ml water
  4. 2 ts cinnamon
  5. 1 ts fleur de sel

1. Add the almonds, sugar, water and half the cinnamon to the pan and mix well.

2. Switch the hob on to the highest level and heat the almonds without stirring. Once it begins to cook, switch to a low level.

3. Simmer for about 15 minutes, stirring occasionally with a wooden spoon, until the water has evaporated and the sugar is dry. Continue stirring for approx. 5 minutes until the sugar melts again and coats the almonds.

4. Add the fleur de sel and remaining cinnamon and mix together. Place the almonds on a baking tray lined with baking paper, pull apart with two forks and spread out with enough space between them. Leave to cool.
