Ingredients
- 1500 g red cabbage
- 2 onions
- 2 cloves of garlic
- 4 tbs red wine vinegar
- 2 bay leaves
- 4 cloves
- 1 cinnamon
- 1 star anise
- 2 sour apples or pears
- 50 ml apple juice
- salt, pepper
- 3 tbs currant jelly
Preparation
1. Clean and cut the red cabbage into fine slices with a mandolin. Peel and finely cut the onions and garlic.
2. Mix the dripping wet red cabbage with vinegar, add to the pot and spread the diced onion and garlic over top. Stick the cloves through the bay leaves, add the cinnamon and anise.
3. Heat the pot on highest level up to the vegetable window, switch to a low level and cook for approx. 20 minutes in the vegetable area.
4. Meanwhile, peel, quarter and core the apples or pears and cut it into slices. At the end of cooking time, remove the bay leaves, star anise and cinnamon stick from the cabbage. Add the apples or pears and the apple juice to the red cabbage.
5. Heat the pot on highest level up to the vegetable window, switch to a low level and cook for approx. 10 minutes in the vegetable area.
6. At the end of cooking time, season the red cabbage to taste with salt, pepper and currant jelly.
Tip
- Melting a small piece of dark chocolate in the red cabbage gives it a very sophisticated touch.
