Ingredients
- 200 g floury potatoes
- 100 g bacon cubes
- 1 onion
- 20 g butter
- 120 g white bread (from previous day)
- 100 ml milk, lukewarm
- 1 egg
- 20 g flour
- salt, pepper
- 1/2 bunch chives
Preparation
1. Peel the potatoes, cut into cubes and place in Softiera insert.
2. Peel and finely chop the onion and add to the pot with the butter.
3. Heat the pot on highest level up to the roasting window, switch to a low level and add the diced bacon. Sear until lightly golden brown. Remove from the pot and leave to cool slightly.
4. Pour 150 ml of water into pot and place Softiera insert in it. Place EasyQuick with sealing ring 24 cm on pot.
5. Heat the pot on highest level up to the steam window, switch to a low level and cook for approx. 10 minutes in the steam area.
6. Remove the EasyQuick at the end of the cooking time, take out the Softiera insert and let the potatoes steam dry.
7. Cut the bread into small cubes, pour the milk over the bread and leave to soak for approx. 5 minutes.
8. Press the potatoes through a potato ricer. Add bacon cubes, soaked bread, egg and flour to the potatoes. Season with salt and pepper and mix everything well.
9. Using the EasyQuick, cut a circle out of baking paper and place in the Softiera insert. Form four dumplings from the mixture and place in the softiera insert.
10. Pour 150 ml of water into the pot and place Softiera insert in it. Place EasyQuick with sealing ring 24 cm on pot.
11. Heat the pot on highest level up to the steam window, switch to a low level and cook for approx. 10 minutes in the steam area.
12. Finely chop the chives and sprinkle over the dumplings to serve.
Tip
- Nutty sage butter with bacon dumplings: Melt 50 g butter in a small pot over a medium heat and add 5 sage leaves. Continue to heat the butter until it bubbles and turns golden brown. Stir occasionally to prevent the butter from burning. As soon as the butter smells nutty, remove the pot from the heat and leave to cool slightly.
