Pasta alla carbonara

  1. 100 g bacon (best Guanciale)
  2. 500 ml water
  3. 200 g Pasta (Rigatoni)
  4. salt
  5. 2 eggs
  6. 60 g Pecorino Romano, grated
  7. black pepper (or AMC Pepper Trio)

1. Bacon cut into cubes.

2. Beat the eggs in a bowl and stir in the Pecorino. Season with pepper or AMC Pepper Trio.

3. Place the pot on Navigenio and close with EasyQuick with sealingring 24 cm. Heat on level 6 up to the roasting window, switch to level 2 and roast the bacon cubes thoroughly. Remove from the pot and set aside.

4. Put water and pasta in the same pot and add a little salt to taste.

5. Close with the EasyQuick with 24 cm sealing ring. Switch Navigenio to "A", enter the cooking time according to the package instructions (for "extra al dente" approx. 2 minutes shorter) into the Audiotherm and cook in the steam area.

6. At the end of cooking time, drain the pasta and collect the water. Place the pot in the separate inverted lid. Fold in the prepared cheese mixture.

7. Gradually add some of the pasta water until a creamy sauce is formed.

8. Season pasta to taste and season with pepper to taste when serving.
