Ingredients
- 200 g cauliflower
- 200 g broccoli
- 200 g chickpea flour
- 1 knife tip baking powder
- 1/2 ts salt
- 1 ts AMC Exotica
- 250 ml water
- 150 g yogurt
- 1 tbs tahini (sesame paste)
- 1 untreated lime
- salt, pepper
- 1 L oil for deep-frying
Preparation
1. Cut the cauliflower and broccoli into florets. For the pakora, in a bowl, mix chickpea flour with baking powder, salt, AMC Exotica and water until a smooth batter forms.
2. For the dip, mix yogurt with tahini and lime juice; season to taste with salt and pepper.
3. Add oil to the Wok and heat on highest level up to the roasting window, switch to a low level. Stir the batter well again. Add the cabbage and toss in the batter; then add in batches to the oil. Deep-fry until the turning point is reached.
4. Finish deep-frying the cabbage florets while turning them until golden. Remove and let drain on paper towel. Deep-fry the rest of the cabbage florets in the same way.
5. Serve pakora with the yogurt dip.
Tip
- To serve, sprinkle some more AMC Exotica over the pakora.
