Meat loaf with pumpkin chutney

Meat loaf:
  1. 1 slice toast
  2. 500 g minced meat (beef)
  3. 1 small onion
  4. 1 egg
  5. chili flakes
  6. salt, pepper
Chutney:
  1. 300 g pumpkin
  2. 1 untreated lemon
  3. 100 g dried apricots
  4. 125 ml white wine
  5. 2 tbs walnut oil
  6. 2 tbs apricot jam
For gratinating:
  1. 50 g feta
  2. 20 g pine nuts, toasted

1. For the meat loaf, cut the toast in cubes and soak in water. Peel and finely dice the onion. Squeeze out the soaked toast and knead the mince meat, onion and egg. Season with chili flakes, salt and pepper.

2. Cut out a circle of baking paper with the help of the EasyQuick and place it in the sieve insert.

3. Shape the mince meat mixture into a flat, round loaf (approx. 20 cm ø) and place on the baking paper.

4. For the chutney, peel and dice the pumpkin, wash the lemon with hot water, halve and divide into 4 wedges each. Dice the apricots. Mix with the rest of the ingredients in the pot.

5. Place the sieve insert on the pot and close with the EasyQuick with the 24 cm sealing ring.

6. Place the pot on the Navigenio, heat on level 6 up to the steam window, switch to level 2 and cook for approx. 10 minutes in the steam area.

7. Meanwhile, crumble the feta and mix with pine nuts.

8. Place the sieve insert on a large plate and spread the cheese-nut mixture on top of the meat loaf.

9. Place the Navigenio overhead, switch to high level, gratinate for approx. 5 minutes. Serve the meat loaf with the chutney.
