Ingredients
- 400 g spiny dogfish fillets
- 100 g flour
- 15 g wine vinegar
- 500 ml deep-frying oil
For the marinade:
- 1 tbs salt
- 2 cloves garlic
- 1 pinch dried caraway
- 1 pinch sweet paprika powder
- 2 tbs fruit vinegar
- 1 pinch dried oregano (wild marjoram)
Preparation
1. Overview of ingredients.
2. Chop the garlic and cut the fish into small pieces.
3. Mix all the ingredients of the marinade in a bowl. Add the fish and marinate for 1 night.
4. The next day take out the fish, dry and turn in flour.
5. Pour oil in a pot, place pot on Navigenio and set it at level 6. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears.
6. As soon as the Audiotherm beeps on reaching the roasting window, set Navigenio at level 4 and remove the lid. Add half of the fish cubes and close with the lid again.
7. Remove lid and dry with kitchen paper. Repeat this process each time on reaching 98 °C.
8. Check from time to time and continue deep-frying until a golden brown colour is achieved for approx. 3-5 minutes.
9. Drain the fish on a kitchen paper, add the other half of the fish cubes to the pan and deep-fry keeping Navigenio at level 4.
