Lebanese Shawarma

  1. 1 kg beef meat
  2. 2 pieces loumi - dried lemon
  3. 4 pieces cardamon
  4. 1 ts garlic powder
  5. 1 ts black pepper
  6. 1 1/2 ts sweet paprika
  7. 1/2 ts ginger
  8. 1 ts mixed spices
  9. 1 ts coriander
  10. 2 g crushed mastika
  11. 200 ml red wine
  12. 2 tbs olive oil
  13. 6 small tomatoes
  14. 5 onions
  15. 2 ts sumac

1. Overview of ingredients.

2. Cut the meat into thin slices, mix with all spices, (except the sumac), loumi, cardamon, crushed mastika, wine and olive oil.

3. Soak for 20 minutes, then drain. Keep the sauce aside.

4. Peel onions and cut with the tomatoes into thin slices.

5. Place pot on Navigenio and set it at level 6. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears.

6. As soon as the Audiotherm beeps on reaching the roasting window, lift up the lid, roast meat slices on all sides.

7. Add the sauce over the meat.

8. Place the Oval strainer on top of the meat. Add tomatoes and onions slices. Season with sumac and cover.

9. Place pot on Navigenio and set it to “A”. Switch on Audiotherm, enter approx. 15 minutes cooking time in the Audiotherm, fit it on Visiotherm and turn it until the vegetable symbol appears.

10. At the end of cooking time, remove the strainer from the pot and set aside.

11. Serve the meat in a plate together with the cooked onion and tomato slices and some tarator dip.

Tip

  • Shawarma can be served with Lebanese bread or pitta, pickles, chopped parsley and fresh onion slices mixed with sumac.
