Ingredients
- 1/2 onion
- 4 cloves of garlic
- 300 g cocktail tomatoes
- 8 tbs olive oil
- 10 pitted black olives
- 4 cod fillets (approx. 150 g each)
- 2 twigs basil
Preparation
1. Peel the onion and garlic, finely cut the onion, and cut the garlic into fine slices. Halve the tomatoes.
2. Add the onion to the pot, heat the pot on highest level up to the roasting window, switch to a low level and roast the olive oil, tomatoes and garlic, and stir. Close with the EasyQuick with the 24 cm sealing ring.
3. Heat the pot on highest level up to the steam window, switch to a low level and cook for approx. 2 minutes in the steam area. Add the olives and fish fillets and cook again for approx. 2 minutes in the steam area.
4. At the end of cooking time, remove the EasyQuick, finely chop the basil, and garnish fish with it. Season with salt and pepper and serve.
Tip
- The recipe is perfect for the summer. Refreshing and light at the same time. The basil can be replaced with parsley.
