Christmassy orange jam

For 2 jars (approx. 300 ml each):
  1. 1 untreated orange
  2. 1 untreated lemon
  3. 1 kg oranges
  4. 250 g preserving sugar (2:1)
  5. 1 vanilla bean
  6. 3 tbs orange liqueur
  7. 1 cinnamon stick
  8. 2 star anise

1. Wash the organic fruit in hot water, finely zest the peel, and squeeze out the lemon juice.

2. Segment all oranges into slices. To do this, cut below the peel and white skin, use a sharp knife to cut out the segments by cutting between the membranes. Squeeze out the rest of the juice. In total, you should have 500 g fruit pulp.

3. Mix the fruit pulp with preserving sugar and lemon juice in a pot. Cut the vanilla bean lengthwise, add to the pot with the liqueur and spices.

4. Close with the EasyQuick with the 20 cm sealing ring, heat the pot on highest level up to the steam window, switch to a low level and cook for approx. 5 minutes in the steam area.

5. At the end of cooking time, remove the vanilla bean and spices, immediately pour the jam into well sterilized jars, and seal them properly. Turn the sealed jars upside down for approx. 10 minutes.

6. Turn the jars over again and let cool completely.

Tip

  • Use it to add a refined touch to an orange tiramisu or to glaze a duck breast.
