Ingredients
- 250 g bulgur, cooked
- 100 g smoked salmon filled
- 100 g fennel
- 50 g radishes
- 1 untreated lime
- 2 tbs olive oil
- 1 ts honey
- 1 ts Dukkah (oriental spice blend)
Preparation
1. Place bulgur in a bowl.
2. Clean the fennel and radishes. Fennel is best finely sliced with a mandoline. Cut radishes into fine slices. Add both to the bulgur.
3. Cut salmon into fine strips and add to bulgur as well.
4. Wash lime with hot water. Finely grate the peel with a lemon grater. Squeeze one half of the lime.
5. Mix lime zest and juice well with olive oil, honey and Dukkah.
6. Pour the dressing over the salad and mix well. Let the salad stand for approx. 30 minutes and then season again.
Tip
- The salad recipe is very good for using leftover cooked bulgur. You can find a basic recipe for cooked bulgur in the AMC recipe world.
