Ingredients
- 300 g salmon fillet
- 3 spring onions
- 100 g fennel
- 1 egg
- 4 tbs breadcrumbs
- 2 tbs grated horseradish
- salt, pepper
- 4 sour apples (approx. 200 g each)
- 200 ml vegetable broth
- 2 tbs honey
- 50 g sliced almonds
- 50 ml cream
- 1 tbs lemon juice
- light-colored sauce thickener
Preparation
1. Very finely dice the salmon fillet. Clean the spring onions and fennel and finely chop both in the Quick Cut.
2. Mix everything with the egg and breadcrumbs. Season with salt, pepper and horseradish.
3. Halve, core and hollow out the apples.
4. Spread the filling over the apples and place the apples in the sieve insert.
5. Add the broth to the pot, cover with sieve insert and close with the EasyQuick with the 24 cm sealing ring.
6. Place the pot on the Navigenio, heat on level 6 up to the steam window, switch to level 2 and cook for approx. 8 minutes in the steam area.
7. Meanwhile, heat the honey in the pan, add the almonds and salt lightly.
8. At the end of cooking time, remove the EasyQuick and spread the honey almonds over top the apples.
9. Place the sieve insert with the apples on a plate, place the Navigenio overhead, switch to low level and gratinate for approx. 5 minutes.
10. Add cream to the broth, add a little sauce thickener, season to taste with salt, pepper, lemon juice and some horseradish.
