Mulled gin

Mulled gin:
  1. 1 unwaxed orange
  2. 1 cinnamon stick
  3. 1 star anise
  4. 1 cardamom
  5. 600 ml apple juice
  6. 100 ml ginger beer
  7. 1 tbs honey
  8. 1 bay leaf
  9. 150 ml gin
Garnish:
  1. 4 untreated orange slices
  2. 4 cinnamon sticks

1. Wash orange hot and peel two strips of orange peel with a peeler. Squeeze the juice from the whole fruit.

2. Add cinnamon stick, star anise and cardamom to pot. Turn on medium heat and roast until they begin to smell.

3. Add apple juice and all other ingredients up to and including the bay leaf and orange juice and zest to the pot and bring to a brief boil.

4. Turn off heat, add gin and let steep for approx. 20 minutes.

5. Serve mulled gin hot, decorated with orange slices and cinnamon sticks.
