Ingredients
- 1 onion
- 1 clove of garlic
- 1 sour apple
- 100 g floury potatoes
- 1 clove
- 1 bay leaf
- 1 kg raw sauerkraut
- 5 juniper berries
- 200 ml apple juice
- salt, pepper
- sugar
Preparation
1. Peel the onion and garlic, finely cut both. Also peel the apple and potatoes. Quarter the apple, core and grate finely with the potatoes.
2. Add the onion and garlic into the pot, heat on highest level up to the roasting window, switch to a low level and roast briefly. Stick the clove in the bay leaf, put it in together with the sauerkraut, juniper berries, grated apple and potato, deglaze with apple juice.
3. Cover with Secuquick softline and close. Heat the pot on highest level up to the soft window, switch to a low level and cook for approx. 15 minutes in the soft area. At the end of cooking time, depressurize the pot and remove Secuquick.
4. Remove the bay leaf and add salt, pepper and some sugar to the sauerkraut to taste.
