Shanghai Mooncake

  1. 300 g flour/meal
  2. 100 g sugar
  3. 40 g whole milk powder
  4. 1 ts baking powder
  5. 150 g butter
  6. 2 pieces egg yolk
  7. 300 g lotus seed paste
  8. 8 pieces salted egg yolk
  9. 3 pinches sesame seed

1. Sift the flour, milk powder into a bowl. Add butter, sugar, 1 lightly beaten egg yolk and knead to form a soft dough. Let it rest for 30 minutes.

2. Add 100 ml water into the pot. Wash the salted egg yolks, put them in a Combi sieve insert and place on the pot.

3. Place the pot on Navigenio and set it to "A", switch on Audiotherm, enter approx. 10 minutes cooking time in the Audiotherm, fit it on Visiotherm and turn it until the vegetable symbol appears.

4. At the end of cooking time, remove the pot from Navigenio and leave aside to cool.

5. Divide the dough into 60 g each, roll into balls. Divide lotus seed paste 40 g each, wrap each piece salted egg yolk with lotus seed paste.

6. Wrap the whole piece with the dough. Glaze the dough with egg yolk and tapping with sesame seeds.

7. Lined baking sheet in the pot and arrange mooncake into the pot.

8. Place pot on Navigenio and set it at level 6. Switch on Audiotherm, fit it on Visiotherm and turn it until the roasting symbol appears.

9. As soon as the Audiotherm beeps on reaching the roasting window, place Navigenio overhead and set at low level, while the Navigenio flashes blue, enter 15 minutes in the Audiotherm and bake until light brown.

10. Allow the mooncakes to cool down before serving.
