Ingredients
- 4 duck breast with skin (200 g each)
- 2 tbs AMC Rustico (or other mixed dried herbs)
- salt, pepper
Preparation
1. Remove the duck breast from the fridge approx. 30 minutes before preparation.
2. Dap the duck breast dry with paper towel, season the duck breast meat (not the skin) with AMC Rustico.
3. Lightly score the duck breast skin crosswise with a sharp knife.
4. Place the duck breast inside the pan with the skin side facing down. Heat the pan on highest level up to the roasting window, switch to a low level and continue roasting until the turning point is reached.
5. Turn the meat, close with the lid again and switch off the hob.
6. Depending on the size of the duck breast, let stand for approx. 8 minutes, season and carve.
Tip
- Risotto or polenta go very well duck breast.
