Ingredients
- 500 ml milk
- 500 ml water
- 200 g rice long-grain (carolino)
- 3 strips lemon peel
- 1 cinnamon stick
- 1 pinch salt
- 4 egg yolks
- 180 g sugar
- ground cinnamon for serving
Preparation
1. Add milk, water, rice, lemon peel, cinnamon and a pinch of salt to the pot, stir, cover with the Secuquick softline and close.
2. Place pot on Navigenio and heat on level 6 up to the soft window, switch to level 1 and cook approx. 8 minutes in softarea.
3. After cooking is finished, place the pot on an inverted lid and allow it to depressurize by itself.
4. Remove Secuquick, stir the rice well. Beat the egg yolks. Add to the beaten egg yolks a little of the warm rice milk, mix well and pour the egg yolks, and sugar to the pot. Stir well.
5. Place the pot back on Navigenio, switch to level 3 and bring to a soft boil while stirring during 1 to 2 minutes.
6. Pour the rice pudding into individual serving bowls or on to a large platter, sprinkle with ground cinnamon. Serve at room temperature.
Tip
- You can leave it at room temperature for the day, it tastes yummy warm or cold, but we recommend refrigerating leftovers. Simply cover with cling film and refrigerate up to 3 days. Decorate portuguese style with cinnamon. The easiest way to do this is to dip a fancy pastry or biscuit cutter into cinnamon and make patterns on the surface of the rice.
