Ingredients
- 1 kg cut of pork for roasting (from the collar)
- 1 red onion
- 2 cloves of garlic
- 1/2 tbs brown sugar
- 50 ml water
- 2 tbs apple cider vinegar
- 1 1/2 ts salt
- 1 tbs Barbecue spice (smoked)
Preparation
1. Remove the pork from the fridge about 30 minutes before you intend to prepare it.
2. Peel onion and garlic, halve the onion and cut into strips, roughly chop the garlic. For the seasoning mix, mix the sugar and all the remaining ingredients.
3. Cut the cuts of pork for roasting into 4 large pieces and dab dry with paper towel. Heat the pot on highest level up to the roasting window, switch to a low level and roast the meat on all sides. Add the onion and garlic and briefly roast.
4. Add the prepared seasoning mix, cover with Secuquick softline and close. Heat the pot on highest level up to the turbo window, switch to a low level and cook in the turbo area for approx. 60 minutes.
5. At the end of cooking time, put the pot in the inverted lid, allow it to depressurize by itself and remove Secuquick.
6. Place the pieces of meat in a shallow dish and pull apart with two forks. Add some of the cooking liquids and carefully mix.
Tip
- This “pulled pork” can be used in a number of different ways. Such as in typical “pulled pork burgers,” for fajitas, on pizzas, in sandwiches, in salads and much more. Simply combine with sauces, salads and toppings as desired.
