Fish fillet in a crispy coat

  1. 4 cod fillets (approx. 150 g each)
  2. salt
  3. 2 ts Dijon mustard
  4. 1 untreated lemon
  5. 50 g Panko (or coarse breadcrumbs)
  6. 2 tbs roast onions
  7. 2 ts AMC Maritim
  8. 1 egg
  9. 2 tbs flour
  10. 40 g butter

1. Dab the fish fillets dry with paper towel, season with salt and brush with mustard.

2. Wash the lemon in hot water and zest the peel, mix with Panko, roast onions and AMC Maritim.

3. Prepare two plates – one with flour and one with breadcrumb mixture. Whisk the egg in a deep dish with a fork. Coat each fish fillet in flour, then in egg and finally in the breadcrumb mixture. Gently shake off excess breading.

4. Add butter to the pan and switch to highest level.

5. As soon as the butter begins to foam, place the fish fillets in the pan, cover with the lid and roast on highest level until the roasting window is reached.

6. Switch to a low or medium level and continue roasting until the turning point is reached. Turn the fish fillet, dry the inside of the lid with paper towel and cover with the lid again.

7. Unscrew the Visiotherm and roast the fish fillets for approx. 3 minutes until they are golden brown.
