Ingredients
- 700 g Swiss chard
- 1 onion
- 1 clove of garlic
- 50 g dried apricots
- 50 g dried tomatoes (in oil)
- 200 g couscous (cooking time: 1 minute)
- 1 ts cumin powder
- salt, pepper
- 500 ml vegetable broth
- 50 g chopped almonds, roasted
Preparation
1. Clean the Swiss chard, cut the stems in thin strips, coarsely chop the leaves. Peel and finely cut the onion and garlic.
2. Dice the apricots. Drain the tomatoes and cut into strips.
3. Add the onion and garlic to the pot. Heat the pot on highest level up to the roasting window, switch to a low level and cook the onion mixture.
4. Add the dripping-wet Swiss chard stems. Spread the couscous over top and season with salt, pepper and cumin powder.
5. Spread the Swiss chard leaves dripping-wet over top. Add the broth, heat the pot on highest level up to the vegetable window, switch to a low level and cook for approx. 2 minutes in the vegetable area.
6. Fluff up the vegetables and couscous with two forks. Fold in the apricots and tomatoes. Season to taste with salt and pepper and sprinkle with almonds.
Tip
- Swiss chard is a real fat burner! The fragrant stems and leaves help the body burn fat thanks to the contained betaine.
- Almonds are highly nutritious. Their many positive ingredients (e.g., unsaturated fatty acids, vitamin E, folic acid and bioactive plant substances) aid well-being, especially heart health.
