Ingredients
Filling:
- 1 onion
- 1 clove of garlic
- 2 carrots
- 400 g soya mince (store-bought)
- 2 tbs tomato paste
- 400 g drained kidney beans (canned), rinsed
- 150 g drained corn (canned), rinsed
- 400 g diced tomatoes (canned)
- 250 ml vegetable broth
- salt, pepper
- cayenne pepper
- coriander powder
Tortillas:
- 8 tortillas (wheat or corn flour)
Toppings (e.g.,):
- grated cheese to taste
- iceberg lettuce to taste
- avocado pieces/strips of red bell pepper to taste
- sour cream to taste
Preparation
Tortillas:
1. Cut out a circle of baking paper and place in the sieve insert. Remove the tortillas one by one from the package and place one on top of each other in the sieve insert.
2. At the end of the cooking time, place the sieve insert on the pot. Cover again with the EasyQuick, heat the pot on highest level up to the steam window, switch to a low level and heat for approx. 1 minute in the steam area.
Toppings (e.g.,):
3. Season the stuffing to taste and serve with the tortillas and the other ingredients.
Tip
- A tip if you are not used to cooking without meat: Simply try it again. When well seasoned, “sin carne” tastes just as good as the version with meat. Anyone who doesn't like that can roast approx. 400 g of mince meat.
- If you can’t find any soya mince, you can also use dried soy granules (follow the instructions on the package).
