Ingredients
- 3 eggs
- 1 pinch salt
- 50 g dried cranberries
- 2 tbs apple juice
- 1 sour apple
- 2 tbs lemon juice
- 200 g sour cream
- 120 g flour
- 1 shot of carbonated mineral water
- 1 ts clarified butter
- 2 tbs brown sugar
- powdered sugar for dusting
Preparation
1. Separate the egg whites from the yolks and beat the whites with salt until stiff.
2. Soak the cranberries in apple juice. Peel, quarter and core the apples, cut crosswise into wedges and drizzle with lemon juice.
3. Stir the egg yolks with sour cream, flour and mineral water as briefly as possible. Carefully fold in the egg whites.
4. Heat the pan on highest level up to the roasting window, switch to a low level, add clarified butter, swirl and spread around. Add the batter and close with lid. Roast until the roasting window has been reached again.
5. Turn over the Kaiserschmarrn. Close with the lid and completely roast until the roasting window has been reached again.
6. Tear the Kaiserschmarrn into little pieces. Add the apples, cranberries, and brown sugar. Caramelize while turning. Sprinkle the apple Kaiserschmarrn with powdered sugar.
