Ingredients
- 1 onion
- 400 g leek
- 750 g waxy potatoes
- 300 ml cream
- salt, pepper
- nutmeg
- 75 g bacon cubes
- 100 g cured ham
- 150 g crème fraîche
- 100 g Gruyère, grated
Preparation
1. Peel and finely cut the onion. Clean and cut the leek into slices. Peel the potatoes and cut into thin slices. Add cream to the pot, season with salt, pepper and some nutmeg. Mix the onion, leek, potatoes, and diced bacon, add to the cream, and spread out a little, but don't mix it. Cover with Secuquick softline and close.
2. Place the pot on the Navigenio and heat on level 6 up to the soft window, reduce to level 2 and cook for approx. 5 minutes in the soft area.
3. At the end of the cooking time, depressurize the pot and remove the Secuquick.
4. Cut the ham into strips and spread on top of the gratin. Season the crème fraîche with salt and pepper and also spread on top of the gratin. Finally, sprinkle with the cheese.
5. Place the Navigenio overhead, switch to the high level, gratinate for approx. 8 minutes, until golden brown.
