Ingredients
Soup:
- 1.2 kg pumpkin
- 1 onion
- 800 ml chicken broth
- 100 ml cream
- salt, pepper
- nutmeg
- 5 stalks flat leaf parsley
- 4 tbs whipped cream
- curry powder
Meat balls:
- 1 small onion
- 1 small banana
- 300 g mixed minced meat (beef, pork)
- salt, pepper
- curry powder
Preparation
1. Peel the pumpkin and dice it. Peel onion and dice it finely, too. Put the pumkin dripping wet in the pot, addonion on top.
2. Heat the pot on highest level up to the vegetable window, switch to a low level and cook for approx. 15 minutes in the vegetable area.
3. At the end of the cooking time, add broth and cream and puree finely. Season to taste with salt, pepper and nutmeg.
4. For the meatballs peel the onion and dice finely. Peel the banana and mash it finely with a fork. Mix both with the minced meat and season well. Roll the minced meat into small balls.
5. Heat the pan on highest level up to the roasting window, switch to a low level, add the meatballs and roast them until the turning point ist reached.
6. Turn the meatballs, cover with the lid and switch off the hob. Let the meatballs rest until done depending on their size approx. 6 minutes
7. Chop the parsley, plate the soup, add 2-3 meatballs and top the soup with a dollop of wipped cream. Sprinkle with a little curry powder and parsley to serve.
Tip
- Not only is pumpkin the perfect base for a delicious soup, it also contains a lot of valuable nutrients such as beta carotene (pro-vitamin A), minerals like potassium and iron and plenty of dietary fiber.
