Ingredients
- 250 g broccoli
- 120 g celery
- 300 g fennel
- 150 g leeks
- 5 stalks parsley leaves
- 400 g fresh dough gnocchi (refrigerated)
- 200 ml vegetable broth
- salt, pepper
- nutmeg
- 40 g parmesan
Preparation
1. Overview of ingredients.
2. Clean broccoli and divide into florets, dice broccoli stems. Peel the celery and cut into fine cubes. Clean the fennel and cut into strips.
3. Place vegetables dripping wet in a pot, place pot on stove and set it at highest level. Switch on Audiotherm, enter approx. 5 minutes cooking time in the Audiotherm, fit it on Visiotherm and turn it until the vegetable symbol appears.
4. As soon as the Audiotherm beeps on reaching the vegetable window, set at low level and cook until done.
5. In the meantime, clean the leeks and cut into fine strips. Pluck and chop the parsley leaves.
6. Add the gnocchi, vegetable broth and leek into the pot and boil up. Season with salt, pepper and nutmeg. Add the parsley.
7. Sprinkle with Parmesan to serve.
Tip
- The fennel green is very aromatic, chop it finely and with the parsley and add both to the vegetables.
