Carrots are vegetables that are really low in calories and should be there in every refrigerator. They are rich in carotene, which gives them the orange colour and is the precursor to Vitamin A. This is important for cell growth, our immune system and eyesight (especially night vision). When cooking carrots, a little fat should always be added, because carotene is fat-soluble and can in this way be better absorbed. Carrots can be stored in the vegetable compartment of the refrigerator about 7-10 days.
