Ingredients
saddle of lamb
- 600 g saddle of lamb
- salt, pepper
- 4 tbs sesame
- 50 g chopped parmesan cheese
- 20 g butter, softended
- 2 tbs olive oil
vegetables
- 400 g carrots
- 400 g kohlrabi
- 2 twigs thyme
- 2 tbs red wine
- 1 ts honey
- salt, pepper
Preparation
1. Remove the meat from the refrigerator about 30 minutes before you intend to prepare it.
2. Peel and mince the carrots and kohlrabi. Remove the thyme leaves from the stems and chop them.
3. Place the pot on the Navigenio and heat on level 6 up to the roasting window, pat the meat dry with a paper towel, switch to level 2 and place the meat inside. Roast the meat on both sides, remove from the pot and season with salt and pepper.
4. Add the vegetables dripping wet to the pot, add the red wine. Heat Navigenio on level 6 up to the vegetable window, switch to level 2 and cook for approx. 10 minutes in the vegetable area.
5. In the meantime, mix together the sesame seeds and Parmesan, butter and olive oil, then season with salt and pepper.
6. Brush the saddle of lamb with this paste. Season the vegetables with thyme, honey, salt and pepper and place the meat on top.
7. Place the Navigenio overhead and switch to low level, bake for approx. 10 minutes. Then switch to high level and gratinate for 5 minutes until golden brown.
