Ingredients
date pudding:
- 75 g pitted dates
- 1/2 ts baking soda
- 125 ml water, hot
- 30 g butter
- 30 g powdered sugar
- 1 egg
- 75 g flour
- 1/4 ts baking powder
- butter for greasing
toffee sauce:
- 50 g butter
- 100 g brown sugar
- 60 g double cream
Preparation
1. Coarsely chop the dates, mix with baking soda, pour hot water over top, soak for approx. 15 minutes.
2. Blend the butter and powdered sugar until fluffy. Add the egg and stir everything well. Mix the flour with the baking powder and stir. Stir in the dates including the liquid at the end.
3. Grease the four heat-resistant ramekins (approx. 150 ml each) with butter and distribute the batter in them. Cover the ramekins with plastic wrap and place in the Softiera insert.
4. Fill the large pot with water (approx. 200 ml), place the Softiera insert inside and close with the EasyQuick with the 24 cm sealing ring.
5. Heat the pot on highest level up to the steam window, switch to a low level and cook for approx. 20 minutes in the steam area.
6. Meanwhile, mix the butter, brown sugar and double cream in the small pot, bring to a boil and let simmer for approx. 5 minutes while stirring. Then let the sauce cool a little.
7. At the end of cooking time, serve the pudding in the ramekin while still warm and top with the toffee sauce.
Tip
- Serve with a fresh fruit salad.
