Ingredients
- 1 kg cauliflower
- 1 onion
- 1 red bell pepper
- 3 tbs olive oil
- 3 tbs honey
- 1 untreated lemon (juice and zest)
- salt, pepper
- 300 g wild rice mix, cooked
- 3 tbs flat leaf parsley, finely cut
Preparation
1. Clean the cauliflower, divide into small florets and place them in the Softiera insert.
2. Pour water (approx. 150 ml) into the pot and place Softiera insert inside. Place EasyQuick with 24 cm sealing ring on pot.
3. Heat the pot on highest level up to the steam window, switch to a low level, and cook for approx. 5 minutes in the steam area.
4. Peel and chop the onion. Peel and slice bell pepper into short stripes. Mix together the olive oil, honey, lemon juice and zest and season with salt and pepper.
5. Allow the cooked cauliflower to cool slightly. Add the onion, bell pepper, rice and some of the cauliflower stock to the salad dressing and mix well. Let stand at least 60 minutes.
6. Add parsley to salad just before serving and season to taste.
